Every recipe has a story.

Behind the Dish is a collection of notes from my kitchen journal—the ideas, reminders, little mistakes, and moments that happened while creating meals for private dinners, wineries, breweries, weddings, and special events.

These aren’t polished cookbook recipes. They’re the handwritten thoughts that usually stay tucked away in a chef’s notebook.

Some pages share techniques I’ve learned over the years. Others are simple reminders to myself, little discoveries, or ideas that made a dish better the next time I made it.

You’ll also find my handcrafted seasoning blends, created the same way I use them in my own kitchen—mixed by hand in small batches and made to bring real flavor to everyday cooking.
